The city’s blade-making lineage begins in the thirteenth century, when swordsmiths from the Yamato school migrated here and found conditions—charcoal-grade forests, consistent water sources, and fine-grained clay for polishing—that were nearly ideal for producing the laminated steel construction of the Japanese sword. Today Seki produces roughly ninety percent of all cutlery manufactured in Japan and exports kitchen knives to Michelin-starred restaurants on six continents, but the older forges still stand, and a handful of master smiths still work by methods that are recognisably continuous with those of eight hundred years ago.
Morning: The Tamahagane Steel Demonstration
The morning begins at a traditional forge where a senior smith demonstrates the construction of tamahagane, the layered steel from which Japanese blades are built. The process involves folding high-carbon and low-carbon steel together multiple times under hammer blows, a technique that simultaneously removes impurities and distributes carbon evenly throughout the billet. Each fold doubles the number of layers—after ten folds there are over a thousand—and the finished steel achieves a molecular structure that is simultaneously harder than Western high-carbon steel and more resistant to shattering. The forge is hot enough that you feel it from six metres away, and the ring of hammer on steel seems to travel up through the floor and into the bones of your feet.
Afternoon: Shaping, Grinding, and the Grammar of an Edge
In the afternoon, you move to a grinding studio where an apprentice in her third year of training demonstrates the togi—the sharpening and polishing sequence that transforms a rough-ground blade into a finished knife. The process uses a progression of natural whetstones from coarsest to finest, each one from a specific quarry in Japan, ending with a finger stone barely larger than a thumbnail that she uses to bring the edge to its final geometry with short, precise strokes. The finished edge is tested by drawing it across a single sheet of newspaper, which it separates in silence with no resistance whatsoever. You attempt the sharpening sequence yourself on a small kitchen knife and understand within minutes that what appears to be a simple physical skill is in fact a spatial intelligence built from thousands of hours of deliberate repetition.
The Conversation Between Smith and Steel
The older smith takes a break in the late afternoon and sits with visitors on a low wooden bench outside the forge, explaining through an interpreter how he reads the colour of heated steel to judge its temperature—pale straw yellow means too cool, bright orange means a fraction too hot, and the particular salmon-pink that lasts only a few seconds in a dimly lit space is the exact moment to strike. He has been making this same judgement for forty-three years. ‘A thermometer would be more precise,’ he concedes, ‘but precision is not the goal. The goal is to make the blade as good as the steel allows.
