In the hills of Hyogo Prefecture, about ninety minutes by car from Kyoto or Osaka, lies the quiet countryside where Kobe Beef truly begins. This is Tajima country — mountains and rice fields, clear air and clean water — and the home of the Tajima bloodline of cattle from which every Kobe Beef is born. To carry the name "Kobe Beef," an animal must be Tajima-born and meet some of the strictest standards in the world of meat; only around two hundred producers in the entire prefecture are entrusted to raise them. The relationship is a little like Champagne and sparkling wine: all Kobe Beef is Wagyu, yet only a rare few Wagyu will ever earn the name Kobe Beef. Among those few is a farm normally closed to the public — founded more than forty years ago and honored over the decades with Japan's most respected breeding accolades, from prefectural and regional championships to the Prime Minister's National Award. For most travelers, and even for most people in Japan, a working Wagyu farm is a world glimpsed only on a restaurant plate. Here, for a few hours, its gates open for you alone. Over about three hours, a native English-speaking member of the producer's own team walks you through the full life of a Wagyu animal, from birth to maturity, moving through the farm in the order the story unfolds.
